Winemaking Notes: Grenache Blanc is a slightly unsung grape from France and Spain. It is predominantly used in white blends and is widely planted in those regions but is quite rare in Washington. From a winemaking perspective it is an absolute joy to work with because it can be shaped into unique styles of wine. It can be both rich and bright and both fruity and herbaceous. Few grape varieties can manage to be so many things at once and we strive to highlight all those characteristics.
The first, and most important, decision is when to pick the grapes. Since our vineyard is right outside the winery door, we can be extremely precise and find the perfect moment when flavors and acid are in harmony. We barrel fermented and barrel aged 91% of the blend sur lies and stirred the barrels weekly for 4 months to draw out the richness and fruitiness. The remaining 9% we kept in stainless steel and sent that wine through a secondary malolactic fermentation. This technique maintains the freshness and reveals the slightly herbaceous nature of the wine. Each barrel and tank becomes their own unique wine and when we blend them together, they become an intricate and exciting finished wine.
The label features one of the many species of sagebrush that grow in The Hills of the Yakima Valley, similar to the shrubbery of the garrigues in Southern France.
Varietal: 100% Grenache Blanc
Vinification: Barrel fermented and aged in neutral French oak barrels sur lies for 5 months. Barrels stirred weekly for 4 months. 9% of blend fermented in stainless steel and sent through malolactic fermentation.
Technicals: 13.1% ABV, TA 5.4 g/L, pH 3.24
