Elévage: Fermented in stainless steel then barrel aged for 21 months in 40% new French oak and 60% second use French oak from select cooperages.
Vintage Notes: 2021 was an unusual growing season in Washington, marked by a record-breaking heat which resulted in low yields. The most significant event was the historic “heat dome” in late June which sent temperatures in Zillah to upwards of 112 degrees. Our vineyard fared well during this heat as we watered liberally in advance and throughout. The rest of the summer remained hot with “Grower Degree Days” averaging 8% more than 2015; one of the warmest years in recent memory. Temperatures cooled in September and October allowing for extended ripening and for acids to hang on. Overall, the harvest was marked by small berries, loose clusters and excellent fruit quality.
Winemaker Notes: The 2021 Cabernet Sauvignon showcases a vibrant ruby red color in the glass. Aromas of cranberry and pomegranate take center stage, offering bright and enticing fruitiness. Subtle undertones of flourless chocolate cake create an intriguing contrast, while accents of pink peppercorns and a medley of baking spices add complexity. A gentle waft of vanilla rounds out the aromatics. On the palate, supple and soft tannins provide a smooth and velvety texture. Flavors of red fruit, dominated by juicy dark cherry and the essence of Italian prune, unfurl gracefully. The wine's profile is marked by savory notes that create a harmonious balance that lingers and finishes elegantly. Drink now and will age gracefully for 10+ years.
