Assemblage: 100% Cabernet Sauvignon from Catherine's Block
Elévage: 23 mos in 50% new and 50% once-used French Oak from selected cooperages
Vintage Notes: The 2016 vintage experienced a very warm spring and early onset of summer followed by a temperate fall season. The cooler temperatures in August and September slowed ripening and extended “hang time” to slow the maturity of the grapes. The result was the longest harvest on record in Washington State (mid-August through mid-November). Overall, 2016 saw very favorable growing conditions that produced wines with ripeness, balance and opulence.
Tasting Notes: This deep garnet colored wine has a bouquet of fresh blackberries, rosemary, vanilla, black pepper and violets. It is a full-bodied and elegant wine that exhibits the same rich flavors on the palate. The mouth feel is round with supple tannins and a subtle acidity that leads to a long finish. You can drink it now but it is suitable for further aging as well. It is a classic presentation of Dineen Vineyard's Cabernet Sauvignon.
